Food and Nutrition Service Supervisor Health Center at Standifer Place
Chattanooga, TN SUMMARY:
The Food and Nutrition Service supervisor is responsible for the daily functions of the kitchens.
He/she answers directly to the Food and Nutrition Service Manager(s).
This position ensures that sanitation guidelines are kept, foodservice standards are met, and the operations offices functions according to prescribed timelines.
QUALIFICATIONS: Must have a high school diploma or equivalent.
1-2 years of healthcare food service experience are necessary.
Must have sanitation and HACCP knowledge.
Must be able to work a varied schedule.
Must have an interest in geriatric population and care.
Must be able to lead and direct partners to achieve daily tasks of the food and nutrition service department.
Communication skills are necessary (written and verbal).
Must be able to foster a team-centered environment.
General nutrition knowledge is necessary.
Must be able to function under times of high stress.
Must be able to make decisions for quality care.
Attendance and punctuality or maintained consistently.
Must be able to operate a variety of foodservice equipment.
Must be able to fill a variety of food service workers roles.
Customer focused behavior is essential.
PHYSICAL DEMANDS: Able to be on feet standing or walking the majority of the day.
Able to lift 50-60 pounds occasionally.
Able to repetitively bend, stoop, squat, and twist.
Able to carry out fine motor skills and manual dexterity.
Mental acuity to meet job qualifications.
Good vision and hearing in order to respond to auditory and visual requests from patients, as well as, able to communicate with staff.
Able to operate all foodservice equipment and sanitation equipment.
Must be able to withstand heat, cold and changes of temperature.
Able to function under high stress conditions.
Able to work extended hours as necessary to maintain department.
No medical problems such as brittle diabetes, uncontrolled seizures, etc., which would endanger self and/or staff or patients.
RESPONSIBILITIES: Organizes food-service work day to achieve patient care standards.
Records temperatures on food (hot and cold), refrigerators and freezers, and dish machine daily.
Monitors staff for correct work behaviors.
Discipline staff for failure to adhere to standards and systems of food service department.
Order supplies for the daily operations of area.
Maintain sanitary kitchen standards in regard to state/federal guidelines and HACCP standards.
Works with patients and families to meet needs.
Understands all state and federal regulations in regard to the food and nutrition service department and the environment of care.
Ensure dining program meets company and facility standards.
Communicates with manager(s) about issues and problems.
Attends all staff meetings and inservices as scheduled and mandated by the facility and department.
Tastes, smells and accepts or rejects food items daily before each trayline.
Ensures that food service standards and systems are used daily.
Works to achieve timely mail service daily.
Documents partner absences, tardiness, lateness, and other attendance discrepancies daily.
Ensures portion control standards and patient preferences are met.
Notifies maintenance with problems in regard to kitchen equipment and environment.
Fulfills positions as necessary to meet the needs of the department.
Ensures that all products are labeled and dated in refrigerator/freezer areas.
Store supplies as necessary. Delivers floor stock/house supplements to nursing units as ordered.
Supervises retail cafeteria to set standards.
Presents professional appearance at all times.
Reduces waste and communicates discrepancies in food quantities daily.
Creates and maintains a sanitary kitchen environment.
Maintains therapeutic diet standards. Monitors partner work habits for safe work practices.
Creates a safe work environment for partners.
All other tasks and duties necessary to achieve patient care.
